Last winter and spring I was doing really well about meal planning, grocery shopping, and cooking every week. I had our food budget down to $50 a week!! And then our wedding happened. And then the tornado and blackout and I never got back in the groove. Part of the problems was that during the summer it is unbearably hot here and I don't feel like eating much more than salads, so meal planning is lost on me. I adopt this "fend for yourself" attitude and chaos reins. And part of it was that there was so much going on, my sewing business was expanding, we bought a house (and moved), and there were social things; so meal planning and cooking just fell to the wayside.
But now that we're in the house and I've developed a loose schedule, I want to get back into the groove. Not to mention our new kitchen is 300% bigger than the old one (ok, that maybe an exaggeration, but it is a lot bigger) and its fall which means I have an appetite again!
Thanks to the wonderful time-waster website Pinterest (are you on it? Find me...) I have found so many new recipes I want to try. But since I'm still incredibly co-dependent on my crock pot, not only because its a wonderful time saver, but also because I feel like I can't screw things up as bad with it, I'm going to stick with recipes that use it for the time being.
This week I'm going to attempt at least 2 of the following:
- Thai Style Pork Stew
- Pork and Hominy Stew
- Spicy Thai Noodles (these aren't crock pot friendly, but the recipe seems really simple...)
What are your favorite things to cook? Any recommendations?

ReplyDeleteI am so far off the cooking bandwagon at this point. I hope to get back in the swing of things after this exam. (Two more weeks!)
ReplyDeleteThe hard part for me is cooking during the week. If it takes more than 1/2 an hour, it's just not going to happen on a weeknight. I should probably embrace my crockpot but at 6 quarts it's way huge for 2 people. *shrugs* We've had good luck with making larger batches on the weekend and then eating that all week, sprinkled in with some easy meals.
Our go to meals are pasta, chef/chicken salads, tacos/burritos/nachos, and grilled cheese. Nothing too exciting, I'm afraid. : )
